3 breakfast recipes with tofu
Vegan scrambled tofu (2 people)
Ingredients: 1 pack of tofu, 1 garlic clove, 2 red onions, 250 g of cherry tomatoes, 8 sundried tomatoes, 2 spring onions (finely chopped), 1 tbsp tomato puree, 2 tsp turmeric, 2 tsp paprika powder, pepper, salt, ½ avocado, 1 tbsp olive oil, couple of basil leaves
You can also add other vegetables, such as mushrooms, carrots or peppers.
Preparation method: pour the tofa and press out the moisture. Cut the onion into rings and finely chop the garlic. Heat a frying pan over medium heat and heat olive oil. Fry the onion and garlic. Then crumble the tofa and put it in the pan. Add the turmeric, the paprika powder and the tomato paste. This way the scramble gets a nice color. Stir well and fry for about 7 minutes. Add salt and pepper if necessary. Cut the spring onions and sundried tomatoes fine. Add this at the last minute and cook for a few more minutes. Serve the scramble on a toasted bun! Use the fresh tomatoes, slices of avocado and basil leaves as a topping.
Tofu pancakes (2 people)
Ingredients: 150 grams of silk tofa, 150 ml of milk, 80 grams of flour, oil, sweetener, optional: grated carrot, herbs (curry, ginger, cumin), olives, peppers,
Preparation: mix the sundae and the milk well until a smooth mixture is formed. Then put in a bowl and add the flour here. Leave it for about 15 minutes. Put some coconut oil in the pan and lower the heat. Bake the small pancakes in parts until the batter is finished. Tasty with fresh raspberries, blueberries, syrup and nuts. But it is also possible with cheese!
Smoothie with tofu (2 people)
Ingredients: 200 grams of side tofu, 1 small banana (in pieces), cherry hand (from the freezer), 1 ripe pear, 1 tbsp chia seed, 1 tsp almond paste, 1 tsp cocoa powder, pinch of cinnamon, vanilla powder, salt
You can also add other types of fruit, such as strawberries or raspberries.
