Lentils originate from the Middle East, where they have been processed in many dishes for centuries. The healthy legumes also appeared in our Western kitchen after hippies flocked to India at the time, where they discovered tasty and cheap lentil dishes. Lentils are not only cheap and easy to prepare, they are also good for our health. For example, a recent study in the American Journal of Clinical Nutrition, in which a team of researchers at St. Michael’s Hospital in Canada confirmed that pulses, especially chickpeas, lentils and beans, would be effective in losing pounds, lowering cholesterol and to feel satisfied longer. For six weeks, 940 adult participants ate daily a portion of legumes at their main meals. And guess what? They lost no less than 5% of their cholesterol and felt saturated for 31% longer. But that does not stop there. Lentils are also an excellent source of iron, dietary fiber, minerals and proteins.
